Caramelized Onion + Pickle Chip Dip

Ingredients (Makes ~ 1 3/4 cups):

  • 1 1/2 tbsp olive oil

  • 1 sweet onion, diced

  • 1 1/3 cups greek yogurt

  • 1/2 cup mayo

  • 2/3 cup finely diced cornichons

  • 1 tbsp minced dill pickle

  • 1 clove of garlic, grated

  • salt and pepper to taste

Instructions:

1) Place a pan over medium-low heat. Add oil, followed by diced onion.

2) Caramelize onions, stirring occasionally, for about 12 to 15 minutes. Remove from heat and set aside to slightly cool.

3) In a mixing bowl combine greek yogurt, mayo, caramelized onions, cornichons, dill, and garlic. Season with salt and pepper.

4) Fold together and enjoy with My Dad's Chips!
